EXPRESSION OF OUR SOIL GALLERY
 
The CAMP DAL KER was one of thr biggest oppidum of Languedoc, the ROMAN have choisen, that unique place ; On that hill 350 m hight, it was fanstastic view on the whole AUDE VALLEY. FROM the top of that hill of LAGASTE, the whole region from pyreneen mountain to “montagne noire” was under control. When M.Rancoule made EXCAVATION around the seventies, he has found many amphoras in one of the castle wineyard. That amphoras show the important activity around wine. Then Château de GAURE joint the TEMPLE with its richness of wine. Later Abbey and its monk made great white wine and more specialy “their local champagne” as blanquette de LIMOUX.
     
 
When FAMILY FABRE took over the estate in 2004, J.Armand Bloc famous winemaker gave the first STRATEGIC GUIDELINES. We will concentrate our strategy on that hill of LAGASTE where 10 ha of Chardonnay and Mauzac wineyard will give us the best wine. The perfect orientation of that hill
Give our wineyard a maximum of sun, having in the time very fresh night(350mhight and near river Aude) to keep acidity of our wine(very unusual for Languedoc wine). Very quickly we had in mind the potential of that wonderfull place, but we decided to protect the richness of the nature. The 200 ha of the estate,are a very rich zone of “biodiversity”, in particular because of many ORCHID that we can find in our forest(more than 30 different orchid finded by a Nederland famous BOTANIST).
TO GIVE OUR CHILD A SAFE NATURE, to create GREAT WINE, the solution was easy : STOP EVERY CHEMIST in the estate. From 2005, we use only natural product and we leave the grass growing in our nice wineyard. We do have permanent wish to respect environnement, ecology having in the same time the goal to have the best condition for our wineyard and grapes. So all product used is made with natural elements such as “purins d’ORTIE”, PRELE, COUSOUDE or ROMARIN in milk “MACERATION”.
     
 
Some of our wineyard are even cleanned manualy with horse. To protect all that “artisanal work”, harvest are made manually in small boxes for the best protection of grapes. That wellbalance allow us to work with natural yeast , “levure indigene”, without any supplement of acid or sugar. Very pure wine, give deep wine, great wine with a long potential for being mature.
Vinification of RED are long maceration(around 3weeks), then a long mature period in barrel or in cement tank from 12 to 15 month; each wine grape is made separetly then blended after aging. ONLY THE BEST barrel will be used for our selected wine. Our wines have, because of their natural condition, an evolution who express day after day wonderfull aroma, mainly fruit in the first year, secondary then tertiary aroma will be then developed.
     
 
Vinification of white wine is made in Barrel, then the aging in barrel will be during 12 TO 15 month, our Chardonnay, Chenin and Mauzac have a nice acidity for white wine of Languedoc. The wine is age on total lees after fermentation to be more rich, round and long test in month. Quality of our white wine is totally linked to the harmony between wineyard, soil and life around. We like to see many animals in our estate. We feed the ground with “compost” which take natural elements and micro organism . That “microorganism” will give life in the groud, and so the best quality for the best wine. With talent MARC will take that power of nature to give you one of the GREAT WINE OF LANGUEDOC.
