OUR WINE FROM LIMOUX GALLERY
 
Limoux wine are now famous because of its soil and weather who give an unusual freshness for a Languedoc white wine. Because of that strength, we quickly decided to produce fine white wine in that marvellous place; Folowing that key decision,the red wineyard will be uprooted because no capacity to do wine in respect with our goal.

The subsoil of the hill where we have the wineyard is made of molasse « lutériennes », marl and calcareous clay; the soil is cutted with ciment sandstone. The soil issued of splitting up of different stone, give many pebble; Weather, however typical mediteraneen see numerous days of rain to give many freshness in our wine and to feed all year the spring of Château de GAURE.

     
 
Near 10ha of Chardonnay take the wonderfull expression of Mediteraneen soil of LIMOUX. 4 ha of Chenin and Mauzac add a good potential to make one of the best vintage of Languedoc white wine.
Manual harvest, cooling the grappes, no sulphite. Natural yeast ”levure indigene” will give the best of the soil in a very fresh and aroma wine.
Very little sulphite before wine bottling to garanty you good stability of our product and to give you total satisfaction.
We used only products allowed in organic culture, no pesticides and no weedkillers. Those products are used only if necessary and, if possible, are replaced by plant macerations. A lot of work is made by hand in order to increase the quality.
All that care and the ploughing support the harmony between the plant and the its environment. So the vine produce better quality grapes and the product will be better for health of the consumer
     

Chardonnay is really the king of white grappes, following to the way we do limit the plant growing the quantities are really low(30hl/ha);
Harvest only by hand in small boxes by a team trained with the sorting. We take only the best grapes and bring them quikly in a cooling room.The cold grapes are pressed in a small pneumatic press. The press is gentle and long in order to take out the best and the most aromatic juices. No sulphur is added and the juices run out by gravity. After racking, the juice is put in barrels. We don’t add any oenological product or selected yeast to keep the notion of “terroir”. Alcoolic fermentation starts (alone) in the barrels and lasts a few months.

Chenin grappes gives us complexity in our selection of white wine ;his wonderfull bouquet, orange tree flowers, grapefruit and dried fruit, apricot and quince. Young it develop flower tast, after the third year secondary aroma will be more around citrus fruit.

Mauzac is a very typical grape of Limoux region, original Blanquette de Limoux ; its residual sugar give possibility to make sparkling wine. Our old wineyards and low production express great aroma wine. Aple, pear, quince and dried fruit blow up with great character.
In our LATOUR DE France estate, we have very old wineyard(over 100years old) of Macabeu and Grey Grenache. In such old wineyards the quantities are very low but the taste are wonderful, we have the best of that grapes with barrel fermentations and the aging varied from 10 to 14 month.
